I have come across a couple recipes that use sour cream, is there a soy based sour cream on the market? If not, does anyone know of a decent substitute.

This also goes for eggs. I know there is ener-g, but I am looking for a liquid egg substitute.

I liked the toffuti one too. Very rich, it tastes like full fat sour cream and made an excellent dip.

Zimngir posted this recipe a while ago but I can't find where so I'll just post it from my recipe file.

Quote:

Sour cream

1 box lite silken tofu

1 tbsp. oil (I used canola)

2 tbsp. soymilk

1 tbsp. lemon juice (originally called for 2 tsp).

2 tsp. Rice vinegar

1 tsp. sugar

pinch salt

about 1 tsp. each garlic and onion powder (we added this) these are estimates, I/we never measure!

Blend until smooth. Yummy! He and I love this on baked potatoes or as part of a dip, yum!

As for eggs I don't think there are any commercial liquid egg substitute but this was discussed as part of another thread and there were plenty of opinions on substitutes for baking and cooking.

http://www.veggieboards.com/boards/s...highlight=flax

Is the "egg substitute" the liquid vegetarian/vegan. Or is it pretty much real eggs in liquid form. I am thinking of brands like egg beaters ect.
