I recently changed to a whole food vegan diet. I do not eat soy or wheat products.<br><br>
I am having trouble getting enough to eat. I HATE crunchy vegetables and am running out of ideas. I love fruit and have been eating a lot of it. I also eat quite a bit of beans and whole wheat rice. I also eat steamed veggies (carrots, broccoli) and some green beans and peas. Sometimes I make my own BBQ Baked beans from mustard, tomato, beans, and some seasonings and eat it with a baked potato.<br><br>
Does anyone have any other ideas?

Edit: As a snack for those you could make: sweet potato fries, savory mushroom in garlic in a little dish, baby zucchini, fry up some okra...

When I was transitioning that thread saved my life, it really helps to be able to see what other vegans eat on a daily basis. There's so much tasty vegan food out there it's ridiculous, you just need to see it all and get a sense of what's out there.<br><br>

Thinking of snacks as "mini meals" is a good way to go about it. Take things out of categories and just eat what you like!

Thanks everyone! I actually hate mushrooms, but all of the ones that I have ever had taste like steak fat ...<br><br>
Those are good ideas. Before this I was vegetarian and ate lots of soy and wheat products, so it is hard to think of a variety of whole foods (kinda sad for a two year veg*n). I will look in that thread and in the sites mentioned!
