I am a new vegan
I am loving the food and slowly learning how to cook various new things.
I would love to have some advice/recommendations on good snacks.
I am not a huge snacker but I do like a cookie with my 5 o'clock cup of tea. Since I started reading labels I realized how much junk there was in my cookies etc. Do any of you have a good cookie recipe which I could make for example sundays and that would last me all week?
I have been making the cupcakes from VeganCupcakesTakeOverTheWorld but I don't think they taste 'fresh' after 2 days and they are also too sweet to have on a daily basis.

Thanx

1 cup flour
3 cups uncooked oatmeal
1 cup applesauce
1 cup chopped nuts
2 mashed bananas
teaspoon vanilla
cinnamon to taste
sugar to taste

Mix.

Spoon onto lightly oiled sheet, bake at 350 about 30-minuted til lightly browned.

Makes a lot of cookies. Keep refrigerated or frozen.

This recipe, minus the sugar, is actually for homemade dog biscuits. But if you sweeten it, it's great for people too. Seriously!

NOTE: If you make this for your dog, PLEASE don't use macadamia nuts, because they're bad for dogs!

I have Vegan Cookies too! I've made Chocolate Crinkles. I would use 1/2 the margarine it called for and maybe add a couple teaspoons applesauce. I do that a lot. They really need a lot of powdered sugar to look the picture! It's okay, they don't need it, and are very good. Brownie like.
I made the Pecan Carmel squares the other day using walnuts. I like walnuts better. I bought brown rice syrup just for them, and glad I did. I love these! Use at least 2 cups chopped nuts, I was under and they're really gooey.

For the typical Toll House chocolate chip I use 1/2 the amount called for shortening using coconut oil or canola, and 1 Tablespoon corn starch with 2 tablesponns water for each egg.

Heres a good egg and dairy equivelant chart:
http://www.bobsredmill.com/docs/pdf/egg.pdf

you should totally get it!

My choc chip cookies were VERY popular! I have half my omi family asking me to make more next time I go visit them! I didn't get to test their shelf life as they were all gone in 2 days.
