I wrote this one for my school paper. You can add an ounce or so of booze (like kahlua or frangelico) for flavour and to make it freeze a bit less solidly.<br><br><br><br>
Tofu-chocolate ice cream<br><br><br><br>
2 300g packages silken tofu<br><br><br><br>
1 1/2 cups chocolate chips<br><br><br><br>
1/2 cup water<br><br><br><br>
1/2 cup sugar<br><br><br><br>
1/4 cup corn syrup<br><br><br><br>
1 tsp. vanilla<br><br><br><br>
Blend the tofu in a food processor or blender until smooth. Combine the chocolate chips, water and sugar in a small saucepan. Heat on low until the chips have melted and the sugar is dissolved. Add the chocolate mixture, the corn syrup and the vanilla to the tofu and blend until smooth. Chill overnight. Freeze in an ice cream machine according to manufacturer's directions. This mixture can also be eaten as a pudding once it is chilled.
