Fried eggplant topped with feta cheese and sauteed mushrooms, onions, and garlic. I am sure that it would be fine without the cheese too.

It's actually Thai Curry 'Tofu' I just forgot to change the title!

Tofu scramble.

Either the soft "runny-eggs" kind made with silken tofu, over toast, like Froggy makes .

Or the more traditional "scrambled eggs" type that my kids like me to make with firm tofu, veggies, nutritional yeast and stuff.

Sounds yummy. Do you have a recipe or is it just basically mix them all together?

Homemade Salsa (or Pico de Gallo) I buy my produce from a local farmers market and this is the season for extra yummy tomatoes. I dice tomatoes (any kind), yellow onions, peppers of choice: jalepeno, hungarian yellow pepper, etc. (depends on how much heat you like), finely chopped garlic, fresh chopped cilantro, lime juice, salt/pepper to taste and I also add a little extra Tabasco depending on the heat from the peppers.

I mix everything together, throw it in the blender to make into a smoother salsa or leave it chunky. I usually put half in the blender and then leave the other half chunky and mix it all together. I used some of this salsa last night in No-Queso Quesadillas which was cheeze sauce (there's a recipe here for it), corn, onions, blackbeans all happy inside a tortilla topped with Tofutti Sour Supreme and more homemade salsa.

This sounds really good. I think we may have it for dinner tonight. Last week I made something similar: orzo, black beans, black olives, tomatoes, fresh cilantro, garlic, a little bit of onion, lime juice, olive oil and vinegar. For some reason, I can't seem to get enough of cilantro-lime things right now.

What goes into this other than orzo and sun dried tomatoes? Sounds like something I might want to try.

I love tofu curry soup with crunchy sun dried tomato biscuts. If I can find the recipe for the biscuts I may post it in the recipes form along with the soup.
