i bought vegetarian mock chicken meat from the asian store. i wanted to make bbq sandwiches. the ingredients are fried gluten salt sugar and soysauce does this mean i dont have to season it? it has alot of sodium. also where can i get good plain seitan?

Those are usually pre-seasoned a bit, as are most pre-packaged seitans. Your best bet is to make your own from scratch, that way you can season it the way you want to. It's really pretty easy.
