Tabasco in spaghetti sauce. I add it in the beginning so it has time to cook in and it'll lose any of the tangy-ness that it has.

A bit of paprika to a lot of things. Just enough to barely taste if one concentrates on it.

Oh yes! ANYTHING chocolate I add a little coffee, and SOME type of chile. Usually cayanne or chipolte.
