Scones

Category: Breads

Suitable for a: vegan diet

Ingredients:

2 cups flour

1 Tbsp baking powder

1/2 tsp salt

2 Tbsp sugar

1/2 cup plus 1 Tbsp vegan margarine

1/3 cup soymilk

egg replacer equivalent to 1 egg

Instructions:

------------------------------------------------------

Preheat oven to 450°F.

Mix dry ingredients.

Cut in margarine.

Make a well in the middle, add soydrink and egg replacer.

Mix with a fork to form a soft dough.

Knead lightly. Shape into 2 discs about 3/4" thick.

Cut each disc into quarters

Put on a baking sheet and bake for 10-15 minutes, until light golden brown.

Serve warm with vegan margarine and/or jam.

Additional comments:

------------------------------------------------------

I love these 'cause they're so basic, and so versatile.

Dress these up however you'd like! Dried fruit, nuts, fresh berries, cinnamon, whatever.

omg. scones. I want to try these... I have some dried cranberries in the pantry... would be lovely. Might do it on Monday after I can figure out what to do with these zucchini brownies lol

Well as i am veggie and not vegan i used milk and an egg and i have to say i am quite proud of myself. They are really nice and my partner who doesn't like scones liked them :)

Scones! I find that in the states scones are only good if homemade. Every time I've had them in cafes and other places they are just so....blahh.

But when I make them at home, the texture seems different and they are just better. I think most things are better when made in your home, but scones are one of the big ones for me.
