My school is starting in a week(very sad) and I wantd to know if any one had some suggestions for lunches I could bring. I cant mircowave anything and I usually like to bring just a brown bag not one of the kind that refridgerates stuff. So besdies like hummus on vegan bread or tortilla bread does any one have some ideas for me?? any would be greatly apprecitaed. thanks

A week? Dang, I have till the end of august.<br><br><br><br>
I suggest investing in a gel ice pack or packing a frozen juice box so your food will stay cold. And freezing things such as individual apple sauce packs, veggies, or anything else that needs to stay cold keeps it cool till lunchtime. Some ideas are:<br><br><br><br>
cooked veggie burgers (they're pretty good cold)<br><br>
pasta salad (pasta, veggies, dressing, beans, etc)<br><br>
PBJ<br><br>
Hummus with Pita + veggies for dipping<br><br>
beans<br><br>
cereal in a tupperware and individual sized soy/rice milk<br><br><br><br>
Or you could invest in a thermos for warm things like rice, soup, beans, pasta, etc. But a lot of these things are good cold too.

Tis a known fact that brown bags and peanut butter are perfectly coupled. Also compatible: vegan poptarts, granola or cereal bars, soy cheese + soy meat subs, grilled s'cheese, salads kept in a plastic salad shaker, Glenny's Soy Crisps(yummy mini rice cakes/chips packed w/ protein), bagels, maybe cold pizza in tupperware?

I like grain/bean salads. Here's one of my favourite recipes:<br><br><br><br>
Chickpea-Couscous Salad (serves 4 as a meal)<br><br><br><br>
2 cups vegetable stock<br><br>
3/4 teaspoon cinnamon<br><br>
1/2 teaspoon ground ginger<br><br>
1/2 teaspoon ground cumin<br><br>
1/4 teaspoon turmeric<br><br>
1 cup couscous<br><br>
1 medium carrot, cut into 1/4 inch dice<br><br>
1 small red onion, cut into 1/4 inch dice<br><br>
1 small red bell pepper, cut into 1/4 inch dice<br><br>
1 small cucumber or zucchini, cut into 1/4 inch dice<br><br>
1 small granny smith apples, cut into 1/4 inch dice<br><br>
1/3 cup currants or raisins<br><br>
1-2 cup canned chickpeas, rinsed and drained<br><br>
1/4 cup fresh lemon juice<br><br>
1/2 teaspoon salt<br><br>
1/4 teaspoon fresh ground black pepper<br><br>
some olive oil (optional)<br><br>
white wine vinegar (optional)<br><br><br><br>
1. In a heavy medium saucepan, whisk together the stock, cinnamon,ginger, cumin, and turmeric.<br><br>
2. Add the couscous in a slow steady stream, stirring constantly, and continue to boil, stirring, for 1 minute.<br><br>
3. Cover the pot tightly, remove from the heat and let stand for 15 minutes.<br><br>
4. Fluff the couscous grains with a fork, transfer to a large mixing bowl and let cool.<br><br>
5. Then fluff again, rubbing with your fingers to break up any lumps.<br><br>
6. Add the carrot, bell pepper, cucumber, onion, apple, currants and chick peas and toss.<br><br>
7. Combine lemon juice, salt and pepper (and olive oil or vinegar, if using) until well mixed.<br><br>
8. Pour over the salad and toss well.<br><br>
9. Cover and refrigerate for several hours or up to 3 days.<br><br>
10. Season with additional salt, pepper and lemon juice to taste before serving.<br><br><br><br>
When I make this to bring in my lunch for work, I make the whole recipe on Sunday and then eat for lunch Monday through Thursday.

Thanks for all the ideas!! and yeah my school does start early but we also got out earlier but it still sux that its starting up again.

i'm a sandwich person <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br><br><br>
-a yummy sandwich i like is a tomato/basil/pesto creation with tofu instead of mozzarella cheese.<br><br>
-elvis sandwiches are good (peanut butter and banana).<br><br>
-fakin' bacon with vegenaise, lettuce and tomato is another option.<br><br>
-i also like to make chickpea salads/bean salads and put them on bread.<br><br>
-when i can't think of anything good, i just take a sunshine burger (wooo sunshine burgers!).<br><br><br><br>
and when i don't bring anything, i just buy a bagel with jelly. (healthy, i know <img alt="" class="inlineimg" src="/images/smilies/wink3.gif" style="border:0px solid;" title=";)">)
