Suitable for a: vegetarian diet

Ingredients:

Toast brown rice, then cook with vegetable seasoning.

Toast brown rice, then add two cups of water per cup of rice, also add 1 cube of vegetable soup base flavoring. Cook slowly til light and fluffy.

1 large Portobello mushroom

1/4 cu extra firm tofu

1/2 onion

1 or 2 cloves of garlic

1 cup of flavored cooked brown rice

1/2 cup dry oatmeal, fine cut

1 tbsp wheat germ

1 egg or an egg replacement like ground flax

2 tbsp whole wheat flour

3 tbsp. traditional barbecue sauce

1 tsp onion powder

Instructions:

Toast brown rice, then add two cups of water per cup of rice,

Add 1 cube of vegetable soup base flavoring. Cook slowly til light and fluffy.

Chop mushroom and tofu in food processor, set in aside in large mixing bowl.

Chop onion and garlic in food proc., then saute til clear.

After saute finished, mix all ingredients, press into loaf pan and bake until firm in 350 degree oven.

After loaf has baked, place in mixing bowl, add vegan mayo, and mix thoroughly.

This spread may be used as a base for sandwiches, adding sliced avocado, tomatoes, lettuce, etc., or may be used on melba toasts and served with a bowl of soup.

I've tried this recipe once and when I came up with it, I was going for a loaf that could be sliced. As it came out a bit too crumbly I decided to turn it into a spread which was quite successful.
