Hi!

My husband packs his lunch for work and I usually make him a veggie wrap (hummus, peppers, spinich, cheese, mushrooms) , but this is getting very boring. I need some idea for a cold vegetarian sandwich. He is on the road for work and eats in the car so it has to be cold and not too messy.

Cream cheese, chopped celery and sultanas

Grated carrot, cheese, light mayonnaise

Grated cheese and chopped celery or carrot

Tomato, cheese and pineapple.

Cheese, carrot, lettuce and chutney.

Peanut butter and grated carrot.

Roll, wrapped egg and lettuce

Baked beans (drained) and grated low fat cheese.

Avocado, bean sprouts and tomato.

Tabouli salad, lettuce and fetta cheese.

Peanut butter lightly spread, topped with chopped dried fruit (apricots and sultanas).

Bananas mashed with ricotta cheese.

Hommus, sliced tomato and sprouts.

Garbanzo beans

Mayo

Yellow Mustard

Sweet Relish

Vegetables

2 pieces of bread (anything but white)

Garlic Powder (optional)

Mash up the garbanzo beans with a fork. Mix in mayo, mustard, relish, and garlic powder. Put mixture on bread and top with veggies & other piece of bread.

I just had this on 12 grain bread with cucumber slices & lettuce. It may sound like a strange sandwich, but it's quite good!
