Hi!<br><br>
My husband packs his lunch for work and I usually make him a veggie wrap (hummus, peppers, spinich, cheese, mushrooms) , but this is getting very boring. I need some idea for a cold vegetarian sandwich. He is on the road for work and eats in the car so it has to be cold and not too messy.<br><br>

Cream cheese, chopped celery and sultanas<br><br><br><br>
Grated carrot, cheese, light mayonnaise<br><br><br><br>
Grated cheese and chopped celery or carrot<br><br><br><br>
Tomato, cheese and pineapple.<br><br><br><br>
Cheese, carrot, lettuce and chutney.<br><br><br><br>
Peanut butter and grated carrot.<br><br><br><br>
Roll, wrapped egg and lettuce<br><br><br><br>
Baked beans (drained) and grated low fat cheese.<br><br><br><br>
Avocado, bean sprouts and tomato.<br><br><br><br>
Tabouli salad, lettuce and fetta cheese.<br><br><br><br>
Peanut butter lightly spread, topped with chopped dried fruit (apricots and sultanas).<br><br><br><br>
Bananas mashed with ricotta cheese.<br><br><br><br>
Hommus, sliced tomato and sprouts.

Garbanzo beans<br><br>
Mayo<br><br>
Yellow Mustard<br><br>
Sweet Relish<br><br>
Vegetables<br><br>
2 pieces of bread (anything but white)<br><br>
Garlic Powder (optional)<br><br><br><br>
Mash up the garbanzo beans with a fork. Mix in mayo, mustard, relish, and garlic powder. Put mixture on bread and top with veggies & other piece of bread.<br><br><br><br>
I just had this on 12 grain bread with cucumber slices & lettuce. It may sound like a strange sandwich, but it's quite good!
