I would like to make root beer float cupcakes, but cannot find root beer concentrate or extract. Could I make them without the concentrate/extract, or not? Thanks for all advice.

Craaappp...I thought this was a recipe for them! I got super excited and thought "YES, this IS happening tonight." <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">

I'm not sure about vegan cupcake recipes online using real rootbeer soda, as I just used the concentrate, but man, do they taste like the real things....PLUS...you don't have all the sugar from soda!

any acid would work just fine....regular vinegar if in a pinch and even lemon juice...it's just to make the milk curdle, it's not flavoring anything.

Haha that's such an awesome coincidence i was looking up recipes and figured you sometimes can find them when you go to the pics and see the product and i just clicked on that one first. Now that i have the maker here i trust that one is probably better. Definitely sometimes using the real thing can hurt it, i tried strawberry cupcakes with real strawberry juice and they didn't come out very well lol, i'm sure just flavoring or extract would have worked.

I know strawberry juice is used to color and flavor some things, although I'm waiting for local strawberries to come into season here, instead of store bought from CA.<br><br>
Dormouse.....yes you need to make these! Also give the creamiscle ones a try! Tastes just like the ice cream flavors together. They are one of the favorites when taken to an outing <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Do you think it would be possible to do other soda flavored cakes? Like Dr. Pepper or Coke? I love Coke floats too.

I had actually wondered if you could sub soda for the soy milk, I guess if you made 1/2 the recipe, it wouldn't waste a lot of ingredients, just to try it out!

Could you make a simple syrup from Dr Pepper, Coke, root beer, etc, the same way you make a regular simple syrup?... Equal parts liquid and sugar. Bring the liquid to a boil then dissolving the sugar in it.

I think the recipe calls for 1 cup of soy milk, so you'd have to have equal amts....just not sure if you left out the ACV with the soy milk, whether you'd have the same rising effect, as that interacts with the baking soda and powder. I don't think you'd have to make a simple syrup for anything.
