Roasted veggies with couscous<br><br>
Category: Main Dishes - Other<br><br><br><br>
Suitable for a: vegan diet<br><br><br><br><br><br>
2/3 cup couscous<br><br>
1 cup of veggie broth or water<br><br>
2 tablespoons evoo<br><br>
1 med potato diced<br><br>
1 tomato diced<br><br>
1/2 small onlion sliced<br><br>
1/2 yellow squash sliced<br><br>
1/2 cup mushrooms sliced<br><br>
1/4 cup bell pepper diced<br><br>
hand full of baby carrots halved<br><br>
Mrs Dash to taste<br><br>
salt and pepper to taste<br><br><br><br><br><br>
Place all the veggies in a roasting pan sprinkled with evoo and mrs. dash and toss to coat the veggies. Cover and cook at 350 degrees for about 30 minutes.<br><br><br><br>
Cook couscous according to the box, I made 2 servings there is pleanty for left overs<br><br><br><br>
Spread couscous in plate and pile on the veggies! YUM!<br><br><br><br><br><br>
