Roasted veggies with couscous

Suitable for a: vegan diet



2/3 cup couscous

1 cup of veggie broth or water

2 tablespoons evoo

1 med potato diced

1 tomato diced

1/2 small onlion sliced

1/2 yellow squash sliced

1/2 cup mushrooms sliced

1/4 cup bell pepper diced

hand full of baby carrots halved

Mrs Dash to taste

salt and pepper to taste



Place all the veggies in a roasting pan sprinkled with evoo and mrs. dash and toss to coat the veggies. Cover and cook at 350 degrees for about 30 minutes.

Cook couscous according to the box, I made 2 servings there is pleanty for left overs

Spread couscous in plate and pile on the veggies! YUM!

This is super easy and it tasted awesome, very filling as well. hope you like it
