After slicing up the pumpkin for our beer yesterday, I washed off the seeds & soaked them for 2-3 hours in a brine (4 cups water, 1/2 cup dissolved salt).
I roasted them in the oven at 225F for about 90 minutes.
And can't stop eating them!
we used a pie pumpkin, so the seeds are a bit smaller than those of a jack o'lantern, and eating them shell & all isn't an issue at all. So much better than having to shell the suckers!!
