1 large baking potato, unpeeled<br><br>
either cup of cherry tomatos or 1-2 tomatos<br><br>
2 tablespoons olive oil<br><br>
Salt and Pepper (and whatever seasonings that you like)<br><br><br><br>
Preheat the oven to 350 degrees.<br><br>
Scrub the potato, cut in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges. Place the potatoes on a sheet pan with 1 1/2 Tbs olive oil, salt and pepper. Toss all the ingredients together, making sure the potatoes are coated with oil and seasonings. Spread the potatoes in a single layer. Bake for 20 minutes. Turn potatos over. Add tomatos (lightly coated with olive oil and seasonings). Bake for another 15 minutes.
