1 large baking potato, unpeeled

either cup of cherry tomatos or 1-2 tomatos

2 tablespoons olive oil

Salt and Pepper (and whatever seasonings that you like)

Preheat the oven to 350 degrees.

Scrub the potato, cut in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges. Place the potatoes on a sheet pan with 1 1/2 Tbs olive oil, salt and pepper. Toss all the ingredients together, making sure the potatoes are coated with oil and seasonings. Spread the potatoes in a single layer. Bake for 20 minutes. Turn potatos over. Add tomatos (lightly coated with olive oil and seasonings). Bake for another 15 minutes.
