This is something I threw together, and boy if it didnt turn out yummy. Creamy texture and everything. This was done in a crock pot on low for a couple hours till the water was gone.

2 cans of red beans

2 cups of trader joes brown jasmine rice. (best I have tasted so far)

4 cups of water

2 pinches of red pepper flakes

1 teaspoon or so of curry powder

sorry I didnt measure, just kinda threw stuff in as far as spices go, so you may want to do it to your taste.

Also I used the trader joes rice, I am not sure if the other types of rice would give it the same texture. Try it and let me know.

Simple but boy was it yummy and so filling.

It is a type of brown rice that Trader Joes sells. It is from thailand. To me it tastes different than the other brown rices that I have had.

Your recipe sounds yummy! I do something similar with black beans.

I've only ever had the white Jasmine rice. Good texture, if you want the white stuff. I'm more into brown Basmati now.

Hehehe

Hey, add a tiny bit of tomato sauce or make it with a 'dark coloured' rice (anything but white usually) and got something my culture calls morro. It IS yummy...now I'm craving it.
