Sorry I dont have exact measurments, I'm trying to remeber off the top of my head...

Take tofu and squeeze out all the water, then crumble into fair sized pieces. Mix with salt, pepper, chopped celery and onion, grated carrot, nayonaise, mustard, relish (I guess you could also use real mayonaise). Mix and marinate for about an hour. Toast pita or bread? and slice tomato, cucumber, lettuce, (cheese?) and consume vigorously....mmm...making me hungry

Nayonaise is disgusting once you've tried veganaise. Otherwise it sounds like a pretty great recipie, kinda like a cold tofu scramble..

I saw something like that on food911 (Food TV) except they threw in a bit of tumeric to make it more yellow looking.

I've never used salt or grated carrots in my egg salad but I have used a bit of mustard, and sometimes finely diced onion and celery for the crunch. Instead of relish, I also chop up some pickles and toss in there, too since most relish is too sweet for my taste. I haven't made any in almost forever and man! you're making me hungry for it now.

What type of tofu are you using, Little_Soprano?

Tofegg salad, anyone?
