RAW Garlic-y Ranch-style Dip or Dressing

Category: Raw Foods

Suitable for a: vegan diet

Ingredients:

3 Tbsp Cold Pressed Olive Oil

6 Tbsp. fresh squeezed lemon juice

2 Tbsp water (+ more as needed)

1 - 1 1/2 tsp agave nectar or honey (I'm saying honey only because that's how I've made this - I've never tried agave in this recipe, personally, but honey isn't vegan, so obviously, use agave if you want it vegan)

2 med cloves garlic (I use more - OF COURSE!)

1/4 cup raw cashews

1/4 cup raw sunflower seeds

1/4 cup raw pine nuts

3 tsp mild white miso

1/2 tsp salt

3 - 4 sprigs fresh parsley

a Tbsp. or so fresh dill

handful fresh chives or green onion tops

freshly ground black pepper to taste

Instructions:

Mix olive oil, lemon juice, agave and water in a small bowl with a whisk.

In a food processor, blend nuts into as fine a powder as possible.

Add olive oil mixture, and garlic, and purée until very smooth.

This will take a while!

Add remaining ingredients and blend again until herbs are well blended in. Taste and add more salt, pepper or sweetner if needed.

Add additional water if needed, a tbsp. at a time to thin to dressing consistancy.

This will get thick in the fridge, but you can thin it with almond milk or water.

I used to make this with tofu all the time, but recently tried the raw nuts instead and I've found I like it even better!

Oh that sounds soooo good. Ranch dressing is just one of those sinful things I love. I've been making it with veganaise, plainsoymilk, red wine vinegrette, onion and garlic powder, S&P for years and it's not that close. This sounds YUMMY!!!!

This looks almost exactly like they way I've made it before, but I use a raw miso, a splash of umeboshi vinegar and no dill. DELICIOUS!
