hey guys I just need a quick suggestion on how to swap out an egg in a veggie burger recipe? I'm not sure exactly what the role of the egg is in this recipe so I don't know how to swap it, I'm assuming it's just to keep the burger together? Maybe a little oil?<br><br>

The egg would be to bind it all together. Not sure what could be substituted.

Yeah the egg will be there to bind. I'd use chickpea flour and some water (or stock, or any other liquid), the flour to bind and the water to moisten it up and stop the flour drying it out. I'd start with one rounded tablespoon of chickpea flour and a tablespoon of liquid and then add more of either according to how it's looking. You want it to feel sticky and like it will all hold together.<br><br><img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> Cornflour should also work, it tends to give a different texture but actually hold things together better - it doesn't have a flavour though whereas chickpea flour tastes nutty and yummy.<br><br>
ETA: You can add it all together to the consistancy you think is right, try one, and if it falls apart add more flour too. I usually use more than I expect I need, because more wont harm the flavour or anything and I figure better safe than sorry!

Could you use a recipe that is already vegan? I am suggesting this because someone would already have tested it to see if everything would hold together without egg.<br><br>
It could work to add a little oil or it may hold together fine with the mashed black bean paste...hmmm.

could I use ener-g? I have a whole box I still haven't opened yet!<br><br>
Edit: I looked at a couple vegan recipes that called for simply flour, some that call for hummus, and another that just says ketchup. I'm going to end up playing it by ear.

but if i was making the recipe i'd find a vegan one to make instead

most vegan recipes use vital wheat gluten....have any of that on hand?

That was going to be my suggestion as well.<br>
Adding wheat gluten, and working the mass around a good bit, will give the burger patties a chewie meatiness that you can really sink your teeth into. Just add a little liquid.<br><br>
But I'm sure you've finished eating your burger by now.
