I really don't know much about tofu, but I've had it once. That time, it was almost pure white and very firm. So in one of the new recipies I'm using, it calls for extra-firm tofu, which I bought. However, it's a yellowish color and seems to be crumbling in places. All the extra-firm tofu in the store looked just like that. So I was wondering... is this normal?

Meo, that's not normal, firm tofu should be nice and white and easy to handle. I think triumvir is right on that the tofu you got might be spoiled. Did it smell sour? Water-packed or vacum-packed?

Actually, I live in England at 99 per cent of the time the tofu is as you described and it is fine. Mine is also water packed. As long as it smells ok, I would say it is fine. Dont worry about it being a little crumbly, when you cook it, it will be just great. If your fry it, even better, it will firm up. If you want it firmer, you can unpack it, put it on a dish with high sides, rest a small plate on top if it and then put something heavy on the plate like a tin and leave it in the fridge over night. The water will come out of it and then it will be very firm! Hope that helps.

I believe Tofu is right that as long as it smells ok it is ok. The texture, well, at least I don't think good tofu should be crumbly.<br><br><br><br>
Meo, try stir fry tofu with leeks, Yum!! <img alt="" class="inlineimg" src="/images/smilies/wink3.gif" style="border:0px solid;" title=";)">

that sounds similar to trader joes tofu- It also has a slight yellow tinge to it. Trader joes is excellent organic and CHEAP($1.29). And when they say firm they mean it.<br><br><br><br>
Just like everyone said as long as it doesnt smell it should be fine.<br><br><br><br>
I think Nasoya tofu is pure white.

You could be right about the crumbly tofu may not be the best if crumbly.The one I get though is organic and it does taste great. I really don't know as it is one of the only ones you can get here in a supermarket. Did any of that make sense!??! It is late here so please forgive me!! lol

If your tofu's bad, it will <span style="text-decoration:underline;">not</span> be shy in telling you. You will know that the second you pull off the cover. If it smells like nothing then it's fine. If it peels the paint off the walls and collapses whole ecosystems while making you <img alt="" class="inlineimg" src="/images/smilies/spew.gif" style="border:0px solid;" title=":spew:"> , then you've got a bad batch on your hands and you should toss it immediatly.
