I have been using more and more tahini since making the first batch of hummus. I was wondering, though, about the liquid or oil or whatever that came in the top of the jar over the tahini. Every time I make hummus, I spoon out the tahini trying not to spill the liquid. Is it ok to just pour it out or would that make the rest of the tahini dry out or something?

The tahini will dry out if you take off the oil. It's the same with all natural nutbutters.

You need to stir that 'liquid' back into the tahini before you spoon it out. Its oil that seperates naturally but is actually a vital part of tahini. When taking tahini off the shelf, first shake or stir your tahini until its completely mixed before using.

I mix it up and then put it in the fridge - same as natural pb.

i mix my tahini and store it upside down in a jar in the fridge.. if it needs mixing when i pull it out, it's still pretty easily blended up that way if mixed before tossed into the fridge..

Whatever you do, don't attempt to mix it back together with a hand mixer because it will throw the oils on the top out in all directions covering you, your kitchen and every solitary appliance in the area with a thin, almost impossible to remove, layer of greasy oil.<br><br>
