The basic key is to count calories, like others said.
I've been vegan for maybe a month now (I'm bad with keeping track of things like this), and have lost 4 - 5 pounds. When first losing weight I had about 1200 calories a day at least, now I have about 1300 -1400 (I've started to excercise more, and the 1200 didn't seem to be enough)
It depends on you though, this calculator might be somewhat helpful to you: http://www.globalrph.com/dieting_calc.htm
Unless its your first couple of weeks of drastically changing your eating habits, or you're on the Biggest Loser, like the above poster said, its not healthy to lose more than 2lbs a week.
And if you've been losing weight sometimes you hit a "plateau." Its happened to me quite a few times when I didn't lose weight for something like 2 weeks, but just try changing things around a bit.
