Purslane and Rice<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>

Disclaimer: This is one of the only recipes that I've posted that I have never tried. Froggy grew purslane inhis garden this summer and I was curious what to do with it (other than just nibble on it raw) so I researched recipes in cookbooks and such. This is my variation on one that looked good (only they cooked it n CHICKEN stock!). You can buy bunches of purslane at some farmers markets.<br><br><br><br>
a bunch of purslane , washed and chopped<br><br>
1 onion, peeled, halved and then sliced<br><br>
2 medium size tomatoes, chopped<br><br>
1/4 cup of rice, washed<br><br>
3 tbs of olive oil<br><br>
1 tsp. 'chick style' vegetarian bullion or broth powder<br><br>
salt and ground blackpepper, to your taste<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Put the all the ingredients in a pot, cover it and cook on slow heat until rice is tender. (about 30 minutes).<br><br><br><br>
Thats it! Couldn't be simpler!<br><br><br><br>
