A great little meal to make from leftovers. Goes great with baked and steamed veggies or a protein dish.<br><br><br><br>
Can be ovo-lacto or vegan depending on ingredients used - I'm sure egg replaced and dairy alternatives would work well aswell.<br><br><br><br>
400g cooked mashed pumpkin<br><br>
400g cooked mashed sweet potato<br><br>
1 egg<br><br>
1 cup milk<br><br>
1 cup cooked rice<br><br>
50g fat grated cheese<br><br>
1 close garlic, crushed<br><br>
Salt, pepper, mixed herbs.<br><br>
30g extra grated cheese<br><br><br><br>
Mix all ingredients together except grated cheese. Place mix in a non stick lasagne or casserole dish. Top with extra cheese. Bake at 180C for about 30min or until the top is browned.
