A great little meal to make from leftovers. Goes great with baked and steamed veggies or a protein dish.

Can be ovo-lacto or vegan depending on ingredients used - I'm sure egg replaced and dairy alternatives would work well aswell.

400g cooked mashed pumpkin

400g cooked mashed sweet potato

1 egg

1 cup milk

1 cup cooked rice

50g fat grated cheese

1 close garlic, crushed

Salt, pepper, mixed herbs.

30g extra grated cheese

Mix all ingredients together except grated cheese. Place mix in a non stick lasagne or casserole dish. Top with extra cheese. Bake at 180C for about 30min or until the top is browned.
