Why can't I get pudding to set up using soy or rice milk?

also, I bought a tub of fresh soft tofu, and thought i would use that to make pudding, but when i was going to do it, I wasn't sure if i needed to cook the tofu, and use the cook n serve pudding mix, or just add the instant pudding mix to it and chill.

Does anyone know?

tofu pudding uses silken tofu from Deborah

From: Deborah (Recipes.vegsource.com)

Vanilla Pudding Mix + Variations

3 cups soymilk powder or rice milk powder

4 cups sugar

1/2 tsp nutmeg

1 tsp salt

3 cups cornstarch

1 Tbs vanilla powder, or 1 vanilla bean, ground to a fine powder

Mix all ingredients, and store in an airtight container.

To prepare, mix 1/2 cup of mix with 2 cups soymilk or rice milk*.

Heat at medium boil, stirring constantly, until thick.

Cool, then serve.

*NOTE:

If you want to use Tofu instead of soymilk or rice milk,

blend 1/2 cup Tofu with 1 & 1/2 cups water.

Use in place of soymilk or rice milk in recipe.

VARIATIONS:

Add these flavorings when PREPARING the pudding, not the mix!

Lemon: Omit vanilla. Use 1 tsp lemon extract per 2 cups liquid soymilk.

Chocolate: 2 - 3 Tbs cocoa per 2 cups liquid soymilk.

Mocha: 2 Tbs cocoa + 1/2 tsp instant coffee powder per 2 cups liquid soymilk.

Coffee: 2 - 3 tsps instant coffee powder per 2 cups liquid soymilk.

I can't answer that as I have never had the fresh tofu
To tell you the truth, I don't trust the stuff. I always get the packaged kind and the silken tofu, usually from an Asian Grocer. You can ask Chef Deborah if you would like, I am sure she would know.

well, i finally decided to try to make pudding with my fresh tofu. i had a box of coconut cream pudding mix, and i put it in the blender with my package of soft fresh tofu, and added just enough soy milk to get it going, added a dash of vanilla, blended it all up, and put it on the stove to cook, and wah-la. it worked! was very good!
