My cupboard always contains:

Lentils, red and/or green or brown
A good selection of herbs and spices
Pasta (wholewheat for preference)
Tinned tomatoes
Potatoes
Vegetable oil (olive or canola/rapeseed)
Onions and garlic
Greens (some kind of cabbage/collard)
Carrots and celery
Tinned chickpeas
Brown rice
Soya milk (or other plant milk)
Tofu
Soya sauce
Noodles
Frozen sweetcorn
Frozen whole leaf spinach
Frozen peas

Stuff I like to keep on hand:

Nutritional Yeast
Tofu
Fresh Ginger
Garlic
Olive oil
A large assortment of vinegars
Canned Kidney beans
Canned Chickpeas
Canned Pinto Beans
Soba Noodles
Spaghetti Noodles
Soy Beverage (I love how it's not called "milk" anymore)
Canned Tomatoes
Green lentils
Brown Lentils
Red Lentils
Yellow split peas
Potatoes

A well stocked spice cabinet is very essential to me as well

I tend to get a different assortment of fresh veggies weekly so did not include them in my stocked pantry.
