I'm going to a raw potluck on Sunday, and I've got no clue what to bring! I've never thought much about raw food, and after watching a few videos for ideas, it seems like I need a dehydrator to make anything good that isn't carrot sticks or salad.

Any ideas for what to bring to a raw potluck that will impress?

You can make a gazpacho or an avocado soup.

You can make zucchini noodles or lasagne with raw marinara.

You can make cucumber boats with avocado and tomato toppings.

You can make a salad, like spinach, avocado, mint, chives, and grapefruit (sectioned, keep out pith) goes over well.

Mango salsa with romaine boats.

Collard wraps with refried beans (made from sunflower seeds).

Date nut torte or date-nut cookies.

Most of the longterm raw foodists I know who eat healthfully and get enough calories do not choose to eat a ton of dehydrated food. That's part of the point of eating raw and the health benefits - the moisture content in the diet as compared to cooked/dehydrated/prunish diets.
