Going to a BBQ potluck soon. I plan to bring some veggie burgers for me and my hsuband to eat. We will bring Sunshine Burgers and Masala Burgers.

But I also need to bring a side dish. I want something that is easy for me, but has a wow factor for the other attendees. None are vegan, only one is vegetarian, the rest are meat-eaters.

In the past, our veggie meats and cheeses have gotten mixed reviews. There are some die-hards in the group who will not touch anything they think of as "fake." Others are more adventurous and give it a try, but it's more out of courtesy than curiosity and they come to the food with expectations and prejudices.

So I want to bring something that's very obviously simply vegan food: vegetables. I was thinking roasted root veggies or a bean n' veggie stew. Any other ideas?

I love grilled fruit. Maybe some peaches or pineapple to throw on the grill? I've made the Appetite for Reduction mango bbq beans a couple of times for barbecues. They fit right in with the rest of the barbecue food and no one really knows or cares that they are vegan. They just know they're good.

All time fave is a simple black bean and veggie salad!
Cukes, red onions, peppers, celery, all chopped or sliced
Corn! and black beans rinsed and drained.
You could add a touch of dressing,or pasta shells, but I like this straight up. Actually shells with a little oil and vinegar is good.

I underestimated this group of friends and now I feel pretty bad about it. I've been a bit reluctant to really get to know all of them because I had these worries that they were hostile to veganism. And some are. But... one of them announced that she is now a vegetarian and she even brought vegan cupcakes to the potluck!!! So now we have 2 vegans (me and hubby) and 2 vegetarians. Then we have some semi-vegetarians and some carnists.
