Here's a great pasta salad that I whipped up today. Super-easy. You can play with the amounts to suit your taste. This makes enough to feed about 6 people as a main course, or a whole lot more as a side dish. I make it for me and my husband and we have leftovers for the week.

1 box of pasta, cooked but firm (I use whole wheat blend rotini)

1 red bell pepper, chopped

1 green bell pepper, chopped

1/2 cup chopped onion

1 cup (or just a whole can) of small or medium pitted black olives

1 pack of cherry tomatoes

1 1/2 cups cheddar cheese cubes (real or soy)

4 to 6 slices of soy salami, sliced thin

Add Italian dressing of your choice (eyeball the amount, there shouldn't be any "pooling" at the bottom of the bowl after mixing)

Mix well, chill for at least an hour before serving.

You can add fresh parsley if you want to get fancy, and make your own olive oil & vinegar dressing if you want. This was the quick and easy version.
