I just wrote a long post and it didn't go through. :/ I LOVE sweet potato and use it often.
For a shortened version, here are some sweet potato dishes I have made:
manicotti stuffed with a sweet potato ricotta (sweet potato, tofu, nutritional yeast and spices all crumbled together)
Sweet potato "cheese sauce" (steamed sweet potato blended with nutritional yeast, almond milk and spices that makes a very thick and creamy sauce; similar to the Oh She Glows blog "pumpkin cheese sauce"). I add it to macaroni for mac and cheese vegan style.
mashed sweet potato with either coconut milk (full or light fat from a can) or with crushed pineapple
sweet potato bars, cookies, pancakes, and biscuits are others I have used sweet potato in
Plain raw sweet potato for a snack
Baked sweet potato fries with chili powder and garlic or first dip in almond milk and roll in cornmeal and garlic and bake.
Best way to cook it for me is just to peel off the skin, chop, add to a steamer basket over a pot on the stove and steam for ten minutes to get it soft.
