Don't avoid vegetables. Most people don't eat enough veggies, vegetarian or otherwise. At least find something like V8 that makes for a decent veggie substitute. Or try a new type of veggie every week until you find a couple that you like.
I would recommend googling the vegetarian food pyramid, to get a general feel for what proportions of different types of foods to eat. You don't have to follow it strictly, but it's a good starting point. And make sure you are getting enough vitamin B12 and omega-3 fatty acids. Those are the nutrients that are hardest to get in a veg*n diet. I'm new at this, too, and I've found that my soy milk is a great source of B12. I do walnuts and flaxseed oil for the omega-3, plus the little bit that's in the soy milk.
