Peanut Butter Soup

Category: Soups

Suitable for a: vegan diet

Ingredients:

1 large onion, diced (1 cup)

1 large clove of garlic, minced

1 Tablespoon peanut oil (or vegetable)

1 stalk of celery, chopped

2 carrots, diced

2 leeks (white part only), sliced

2 cups of diced potatoes (redskin are great)

4 cups vegetable broth

1/2 cup smooth peanut butter (I use natural, and I mound the peanut butter in the measuring cup)

1/4 teaspoon cayenne

1/4 teaspoon pepper

salt to taste

Instructions:

Saute the onion and garlic in the oil until the onions are transparent. Add the celery, carrots, potatoes, leeks and broth. Bring the soup to a boil, reduce the heat, cover the pan and simmer until the vegetables are tender, about 15 minutes. Stir in the peanut butter, the cayenne, and the pepper. Transfer the soup to a blender and puree until smooth. Add salt if necessary.

Mmmm... that looks so good. Now to get someone to come make some for me (I'm home, sick, in bed with a cold...).

I love peanutbutter flavor in soups!
