Pealentilsweetpotato soup.

Suitable for a: vegan diet



1 Onion

6 cloves Garlic

1 handful Barley

1 handful Wheat Berries

1 tsp Thyme

1 tsp Basil

2 Tbsp Dill

1/4 tsp Fresh ground nutmeg

1/2 tsp Cinnamon

1 tsp Curry Powder

- - S&P

1/2 tsp Rosemary

1 Tbsp Oil

2 cups Lentil/split pea mix*

1 big Sweet Potato

7 cups Stock - I used a mix of mushroom, veggie, and vegan beef



1: Put all ingredients except Lentil/split pea mix, stock, and sweet potatoes into soup pot. Cook over medium heat until soft. (this smells so good.)

2: Add Lentil/split pea mix. Stir until peas are shiny and hot (like me

3: Add stock. Stir. Cook for about 2 & 1/2 hours, adding more water if necessary, stirring occasionally, until everything is soft and mushy. Except the wheat berries. You'll notice they stay slightly firm. This is delightful. You get a nice little pop of sweet flavor every time you happen across one. mmm.

4: Cook sweet potato, and mash with a bit of cooking liquid. Stir into soup, bring to a boil to fully break up the potato bits.

5: EAT IT.

Additional comments:


*I had a mix of little red lentils, yellow and green split peas. I don't know where I got it, or when, but I'm sure any combination of peas and lentils would be fine. I'm even sure it would be fine with just peas, or just lentils.

Also - the amounts of the spices are approximate. I don't measure things when I cook, so I am guessing here. Just put some of everything.
I bet any combo of spices would be yummy.
