Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>

1 cup corn syrup<br><br><br><br>
3/4 cup brown sugar<br><br><br><br>
1 cup peanut butter<br><br><br><br>
6-8 cups puffed rice cereal<br><br><br><br>
One half bar of large Trader Joe's dark chocolate<br><br><br><br><br><br>
Instructions:<br><br>

Melt the Trader Joes chocolate in a sturdy bowl in the microwave. When almost liquid, pour small amounts into the individual sections of two ice cube trays. Let cool until fairly well set- maybe half an hour.<br><br><br><br>
Put the corn syrup and brown sugar in a saucepan over medium heat. Bring to a boil, stirring frequently. Remove from the heat and stir in the peanut butter and puffed rice. Spoon the mixture into the ice cube trays over the chocolate and press down so that each ice cube section is full. Refrigerate for best results.<br><br><br><br><br><br>

This is a variation on a common recipe. I find that the use of ice cube trays really makes a difference; otherwise (if you put the mixture in a 9 by 13" pan as most recipes suggest) the treats are almost impossible to cut. With the ice cube trays, the treats come out bite size and just delicious! The Trader Joe's chocolate isn't necessary, but is a nice touch. Be sure to read the ingredients on the Trader Joe's chocolate -most of them contain milkfat, but there is one Dark Chocolate that is 100% vegan and is perfect for this recipe.
