i have not been able to eat enough of them lately..

touch of olive oil, dried minced onion(just a touch) and red pepper..


i dont know if it is because of how much i have been working outside (cleaning up an old farmstead).. also alot of peanut butter for protien..

but anyhow.. do any of you have some bacis recipes i should try??

Recipes involving potatoes? My favorite thing to do is just make home made wedges. Wash and cut potatoes in 1/8 segments. Toss with some oil, and salt, and if you like pepper or garlic of minced onion...
Then bake at about 375 for 45 minutes. To be honest, I've never actually kept track of how long I bake them, but if they're still hard when you poke them, they're not done


My other favorite thing to make is cream of potato soup. This looks like a good recipe. Use vegetable stock of course, and if you like you can use a vegan margarine or soy milk instead of butter and milk. I have made this with soy milk before, and it has a bit of an odd flavor, but goes really well with some toasted garlic bread. And I just like to garnish with parsley.

Potato salad with vegan creamy dill dressing.

Potatoes, cubed, cooked until just tender then refrigerated untill cool
Chopped green onions or any type onion you prefer
Chopped sweet or dill pickles
sliced black olives

Creamy Dill Dressing
6oz vegan mayonaise
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dill
1/2 tsp lemon juice
1 tsp soy milk
1/8 tsp salt
1/8 tsp pepper
1 Tbsp dill pickle juice
1/4 tsp parsley

Yum, I want some now.
