When something says it is pasteurized that just means cooked right? I don't want any weird non-vegan things up in my applesauce. I have been so ill these last few days and cannot hold anything down so I bought organic applesauce that only contains pasteurized apples. I figure before I try to eat I should ask. -=/

Not exactly cooked, just heated below the boiling point for a certain length of time.

The time depends on the temperature. The higher the heat, the shorter the time. At lower acceptable temp for paseturization, the liquid must be kept at that temp longer (30 minutes at 145 F), at higher temps a few seconds are enough (under 20 sec at 161 F).

But the key is, it's not actually cooked, but heated for some time to below boiling point.

The point of pasteurization is to kills off bacteria.

OK, as long as it is a vegan process...I am trying to find simple foods I can keep down and not have to think about eating.
