i made this for dinner tonight and it turned out soooo good. aj had two helpings and she says she doesn't like mushrooms

i adapted it to be vegan

mushroom pasta

6 oz pasta(long noodles work best)

1T vegan butter or margerine

8 oz mushrooms thinly sliced(your choice)

1 lg clove of garlic chopped

1/2 t dried tarragon

1/2 c soy cream

1 1/2 T red wine(i didn't have wine so i used rum lol)

vegan parmasan cheese to taste

1.cook pasta according to directions

2. melt butter in heavy bottom skillet over med-lo heat. add mushrooms and garlic saute for about 5 min

3.add tarragon saute 2 min

4.add cream and wine heat to simmer

5.add pasta. toss. heat through

its not low fat but very yummy
