i made this for dinner tonight and it turned out soooo good. aj had two helpings and she says she doesn't like mushrooms<br><br>
i adapted it to be vegan<br><br><br><br>
mushroom pasta<br><br><br><br>
6 oz pasta(long noodles work best)<br><br>
1T vegan butter or margerine<br><br>
8 oz mushrooms thinly sliced(your choice)<br><br>
1 lg clove of garlic chopped<br><br>
1/2 t dried tarragon<br><br>
1/2 c soy cream<br><br>
1 1/2 T red wine(i didn't have wine so i used rum lol)<br><br>
vegan parmasan cheese to taste<br><br><br><br>
1.cook pasta according to directions<br><br>
2. melt butter in heavy bottom skillet over med-lo heat. add mushrooms and garlic saute for about 5 min<br><br>
3.add tarragon saute 2 min<br><br>
4.add cream and wine heat to simmer<br><br>
5.add pasta. toss. heat through<br><br><br><br>
its not low fat but very yummy

I haven't seen vegan cheese at all around here <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":("><br><br><br><br>
You should try making your own pasta next time (flour, water salt) ... it's different <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

when i can't find vegan parmasan. i used seasoned bread crumbs. it's got the same texture and adds flavor
