I love love love Parmigiana on pasta, but am trying to veganize a lot of my day-to-day choices. I've seen some vegan substitutes online, but I have no idea what's good and what isn't. Does anyone use a vegan Parmesan substitute? What's in it and what's it like?

I make my own,

1 cup nutritional yeast flakes.
1 cup sesame seeds
a pinch of salt

blend until smooth

simple, healthy and yummy.

That's the same recipe I use. It tastes good!

I make
3 TB nutritional yeast
3 TB almond meal (ground blanched almonds--look on the baking aisle)
1/2 tsp (smoked) sea salt

Whiz into a powder. Store in the fridge. We think it is awesome.

I might try it with the sesame seeds the next time I make it.

That's what I do, although I don't grind it into a powder, just mix it.

The sesame seeds add an interesting flavour but I find that it's best to go easy on them because if you use too many, they tend to dominate and you can end up losing the "cheesy" taste.
