I have recently been introduced to Paneer.

I was first given it in a vegetarian Vindaloo, but I was wondering how else I could use it.

Any suggestions?

My favorite dish at Indian restaurants is Paneer Makhni (sometimes spelled Makhani). It has a creamy tomato sauce on it. Delicious.

Ooo, tell me more. I am in England and it may be something else here.

What's in it? Is it like a samosa or a rice dish...?

Another common paneer dish is mattar paneer - peas and paneer.

mmmm, this makes me crave Indian food. Although truly you can throw Paneer in anything with a rich sauce... Spaghetti marinara with Paneer? Sure.

If you Google it, there are lots of great pictures. The dish itself is just paneer cubes and sauce. Rice would normally be served separately, and you can mix it with the paneer makhani on your plate. It's also delectable to scoop of the sauce with pieces of naan (Indian flat bread). Garlic naan is particularly scrumptious with this dish.

Palak paneer is another good dish, which has spinach and paneer. I also like mattar paneer and paneer tikka masala that others mentioned.

Garlic naan is a must with any Indian dish.

It's called the same in England, but only authentic Indian restaurants (i.e. 1% of those in England) will have it on the menu. It is a wet dish, cubes of paneer in a sauce made with lots of cream. You would traditionally serve it with a bread like chapathi or puri.

Palak paneer is a great dish. I use cubes of tofu instead of paneer.

Heat oil in a pan and fry 1 tsp cumin seeds until they become fragrant (release an aroma). Add chilli powder or minced green chillis to taste and fry for a few seconds. Add 3 medium chopped tomatoes or half a can of chopped tomatoes, whichever you prefer, and 1 tsp of minced ginger. Stir until the tomato is reduced in volume by about 1/2. Add the paneer/tofu and cook for about 5 minutes to soften it. Now add half a bag of roughly chopped spinach with salt to taste - I find that spinach needs a lot of salt, I would add about 1 tsp. You can also use frozen spinach. Fold in and cover for a few minutes until the spinach is tender. Lastly add about 150ml of cream or soy cream, stir in, and cook until it is warmed through.

Strange. All of the Indian restaurants I've been to around here have it.
