One pot rice cooker veggie quinoa.

2/3 of a cup quinoa
1 small sweet potato grated
1 small yellow potato in very small pieces
1 onion minced
1 spring onion chopped
1 teaspoon of minced garlic
small handful of green beans cut in small pieces
small handful of snow peas in small pieces
half a can of diced tomatoes
1 branch of celeri diced
1 cup and 1/3 water
1/3 of a cup tomato juice (from the can)
1 cube of veggie bouillon

Throw everything in the rice cooker and hit the white rice setting. Or cook for 25 min at super low and covered on the stove like you would for white rice.

I add 1/4 of an avocado diced on top for garnish for extra yumminess. Gives about 2 servings plus a small bowl leftover to eat as a cold salad (or 2 bigger servings for solid appetite).

You don't need to add salt to this, you don't even need spices, the bouillon and veggies gives ton of flavor to the quinoa.

Thanks for this! I was at a conference this weekend, and my adult son made this and had it all ready when i arrived home ravenous. :)

It was delicious, and he said easy as pie to make. :)

Edit, son said he didn't grate the sweet potatoes, just sliced them.
Quinoa and sweet potato make an excellent combo!
