I've been asked to make a contribution to our departmental newsletter at work, and I chose to submit a recipe.

I'd like to find a good, omni-friendly recipe without any "scary" ingredients like tofu, seitan, etc., that is vegan.

I was thinking maybe a pasta salad, or some sort of fruit-type dessert...something that will seem "normal" to my omni co-workers.

Any suggestions? Kreeli, do you have any ideas?

Kreeli has an awesome website for recipes...if you click on her profile she has a link to it there. I'm sure you'll find something.

You could always toss pasta and veggies together with some Italian dressing and call it a day

Baked potato dishes are good. As is veggie chilli (we use beans and bulghir wheat.)

One of my favorites is slow cooker cerial:

1 cup mixed whole grains such as whole oats, wheat berries, barley or rice.

1/4 cup dried fruit.

3 cups water

Mix in crockpot just before bed.
