Okay guys, I have a friend who is interested in vegetarianism and I'm so excited! She is an incredibly compassionate person who loves animals probably more than people and I know she would love going vegetarian. Finally today she told me she is ready for a 30 day veg challenge and asked me to send my favorite recipes. I pretty much eat things straight out of the box. haha So I'm sending her my 'staple' food items but I was wondering if anyone had some awesome recipes to share with her?

You can just tell me what they are or link me to them and I'll look them up myself so you don't have to hassle with typing it all up.

Thanks!

Wish I could help, I'm away from home for a while and have all my staple recipes in a binder at my house. Good luck though.

Yay! That's awesome to hear. Tell her to go to the Peta website and get a free copy of the "Vegetarian Starter Kit".

If she likes lentils I recommend this recipe. I've been making it a lot lately.

http://www.veggieboards.com/newvb/sh...49#post2845049

These amazing Chickpea Cutlets are from Veganomicon. I prefer them baked rather than fried. There are baking instructions posted by reviewer "bekajoi". Brush with olive oil before baking.

Ohhh I wanna try taco soup. Maybe I'll use more of these recipes than she will. haha

Edit: Also, super interested in those lentil sloppy joes. I love lentils but never know what to do with them besides lentil soup which is pretty boring.
