Coconut oil! It's not to add a coconutty flavor to the cookies or anything like that. It's what works to give the cookies a really nice chewy texture.

I made these, exactly as the recipe stated, and boy are they GOOD!! Just had one warm out of the oven
. I used Hershey's Special Dark cocoa. I used parchment paper on the cookie sheets and the cookies came off NO problem! I got 29 small cookies
This recipe will definitely be a keeper to bring to a future family function!

Thanks for the recipe!

Sadly, it is expensive. (Don't tell anyone, we get ours at WALMART and it's considerably cheaper)

You CAN use Earth Balance Shortening instead, the texture is a bit different but still good.

I think someone in this thread actually used coconut milk? Can't vouch for that...

I use it for the texture, so the not-extra-virgin (or more refined, not sure what it's called) coconut oil works really well - without much of a a coconutty taste.

If you want more of the coconut taste, use the extra-virgin, less refined (and MORE EXPENSIVE) coconut oil.

Ummm...that would be me!
I'm really bad with making substitutes when I don't have an original ingredient that a recipe calls for. Luckily this one turned out just fine!

Edit: I used 'cream of coconut' and not coconut milk, I'm guessing there's a difference?

I was just re-reading through some of the posts and I have to laugh at how many VBers changed the recipe and still had good results...just goes to show it really is an awesome recipe...you can't ruin it!

Well, I just made these. I must say that these are by far the MOST beautiful cookies I've ever made! My omni hubby said that they were excellent and you would NEVER know that they are vegan!


I only used flax meal and milk. No egg replacer stuff. Came out great. I also used Oat milk instead of soy and it came out fine. IMO they were a bit too sweet so I think I will cut down the sugar a little bit. I think 1/2c each will be allright.

But superb!!!

Let me know how those turn out, since I'd like to try making a batch of gluten free ones
. I made them for a second time.. I used a whole wheat flour from my local co-op. It was a bit grainy, so next time I think I'll stick to my normal whole wheat flour. The stuff I bought was better suited for pancakes or oatmeal cookies. I also used up the milk chocolate chips I found in the cupbard, I must say having had vegan chocolate chips, the milk chocolate ones were really crappy. Even DH who LOVES milk and chocolate, liked the vegan better LOL.

I also put too much baking soda in, I measure 2Tbsp instead of 2t...whoops. I caught it and took a bunch out, but I may have taken too much out since they didn't flatten out like the first batch.

So next time, I'll be more careful
. They still tasted great and I had given some away to family and they loved them, so still good even with the "mess ups" Awesome recipe!!
