Just for fun... look in your cupboards and fridge. Make a list of 5 vegetarian or vegan meals you could make using ONLY the ingredients in your kitchen. The meals can be breakfast, lunch, or dinner. Remember, you can't buy anything! It has to be something you can make with what you have on hand right now.<br><br>
I just got my CSA box today, so I've got a lot to choose from. Here's a list of 5 meals that may end up as dinner this week.<br><br>
1. Mashed potatoes with mushroom gravy, garlic green beans, sautéed spinach and onions.<br>
2. Fake bacon, lettuce, and heirloom tomato sandwich with potato salad.<br>
3. Roasted red and gold beets, sautéed swiss chard, carrots.<br>
4. Loaded tortilla with black beans, corn, brown rice, tomatoes and daiya cheddar cheese.<br>
5. Roasted red pepper and carrot soup with pumpkin seeds, mixed green salad.

We just got home from a trip to the city and hit up an asian grocer and a vegan store while we were down there, so a a heap of mock meat products to try.<br><br>
Sweet and sour "prawns"<br>
"beef" in black bean sauce<br>
pizza with semi dried tomatoes, roasted capsicum, olives, capers and teese<br>
dahl, roti and rice ( this is always an easy go to meal)<br>
split pea soup with home made bread<br><br>
this kind of sounds a bit junky, but as we have just got back, I am rather low on fruit and veg.

In terms of recipes, I could make lots of things with Top Ramen <img alt="" class="inlineimg" src="/images/smilies/laugh.gif" style="border:0px solid;" title=":lol:"> I have a ton of pre-made meals, but not a ton of ingredients to make other meals. I'll have to get back to you on that.

I could make:<br>
Spaghetti with olive oil, roasted red peppers, artichoke hearts, and basil - sprinkled with Parma , with a baguette<br>
Three bean Chile with chiorzo (sp?) and corn bread<br>
Tofu scramble with spinach, onions and tomatoes, and English muffins<br>
Black bean burgers on buns with roasted potatoes and mushrooms<br>
Pizza with red sauce, spinach, black olives, roasted red peppers and daiya cheese<br><br>
Wow - I should make one of those tonight!

Everything sounds good! Hmmm.... Not much in the old pantry...<br><br>
Saffron rice with lemon scented summer squash<br>
Chipotle grilled veggie tacos<br>
Great Northern beans with fried cornbread and green onions<br>
Campfire packets ( new potatoes,corn,okra, onion, celery, bell pepper, squash, old bay seasoning)<br>
Jerk asparagus with basmati rice<br>
Sweet potato casserole, maybe adding some orange and cinnamon<br>
Oops.. that's six. Oh well.

How odd, i was just looking into joining supercook.com or a similar site to find more recipes for the food i have on hand.<br><br>
My food supply is currently in a sad state (i don't even have lentils or onions <img alt="" class="inlineimg" src="/images/smilies/bigcry.gif" style="border:0px solid;" title=":cry:">)<br>
The sorry dishes i could make<br>
1. Broccoli in an Indian sauce<br>
2. Spaghetti in tahini sauce<br>
3. Kale miso soup<br>
4. Cinnamon apple sandwich<br>
5. Potato with Italian dressing<br><br>
Can't wait for this day-long downpour to end so i can go get some food.

Oh, i didn't mean that i <i>would</i> eat that, just that i <i>could</i> <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p"><br>
They would be peanut butter and cinnamon apple sandwiches without the peanut butter, which would be very sad IMO. So sliced apple with cinnamon (and maybe some other sweet spice) sprinkled on top between bread or toast.
