Very soft and chewy oatmeal raisin cookies without the butter. Yay Even my non vegetarian/banana hating brother loved it.

1 large mashed banana ( around 7/12 cup) Well you can you 3/4 cup mashed banana (which was what i intended to do but i was very stupid and measured 1/3 cup + 1/4 cup when it was suppose 2 be 1/2 cup +1/3 cup)

2 tbsp vegetable oil

1/2 cup white sugar

1/2 cup packed brown sugar

2 eggs (egg substitute for vegans)

1 tsp vanilla extract

1 1/4 cup all purpose flour

1 tsp baking soda

3/4 tsp ground cinnamon

1/2 tsp salt

2 3/4 quick oat

1 cup raisins

1/3 cup walnut *optional

-Preheat the oven to 375 degrees Fahrenheit

-Cream together the mashed banana, oil, white sugar and brown sugar.

-Beat in the eggs and vanilla extract until it's all fluffy.

-Slowly mix in the flour, baking soda, ground cinnamon and salt.

-Lastly stir in the quick oats, raisins and walnuts.

-Scoop the mix onto a baking sheet and place them into the oven. Bake for 6 minute, take them out and flatten the cookies because bananas were used instead of butter or margarine, the cookies will not spread as well. Then place the cookies back into the oven for another 6 minutes. (You can flatten the cookies before you place it on the cookie sheet but it's a bit harder. The cookies will become softer when it's in the oven)

fwiw, I don't think you'd need to use an egg substitute at all. The banana acts as a binder, which is the purpose of the egg in this recipe. I've made tons of oatmeal raisin cookies with bananas and no eggs.
