ie. Earth Balance. Your standard margarine. Look for 'non-hydrogenated' on the packaging -- it's far healthier for you than the older, hydrogenated margarines. Most are non-hydrogenated nowadays.

Hydrogenation is a process that fat is put through to make it more stable in things like margarines, or a lot of processed baked goods and foods. This type of fat, however, is worse for you than saturated fat and should be avoided. I believe the writer of the recipe just doesn't want you to make unhealthy goodies.
