Tofu is made out of soybeans, correct? Wouldn't it be possible to make "tofu" out of ANY bean? That would be so cool, like....Black Bean Tofu, Chickpea Tofu, Pinto Tofu, Navy Bean Tofu, Cannelini Bean Tofu...etc. Is this possible? And if so, why hasn't anyone done it yet?

i think it's that the protein in soy beans is so totally concentrated and unique it's not duplicated in any other bean. soy is the only legume that is a "complete" protein...all other legumes need to combine their proteins with grains to make up all the...uh...amino acids, i think (?), that provide you with complete protein.

maybe soilman knows better than i do about this, but that's my suspicion.

I often frequent a local vegetarian chinese place that does offer peanut tofu on the menu - yes, this is "tofu" made from peanuts. One time i worked up the courage to try it, but the waitress talked me into going for something else. Eh, go figure.

Seeing that chick peas are my totally favorite bean/legume in the world, i'd be interested in trying tofu made from them. Heck, i have yet to have anything made from chickpeas as of yet that i didn't like ... oh man, now i'm craving falafel!
