Hi and welcome, Christine. Personally, I think that being a vegan is more easy than vegetarian if you get used to making food without milk, eggs and honey because you don't have to look free range options any more and the line is much clearer. You could try some vegan days every week, that way you can learn cooking before transition. (This is also the reason why abrupt veganization isn't suitable for many - they don't know how to cook or know just about very narrow variety of foods.)
