I like Mark Bittman's "How to Cook Everything Vegetarian" and the Moosewood cookbooks. Also, Colleen Patrick-Goudreau has a free (and wonderful) podcast on all things vegetarian (actually vegan). It's called "Vegetarian Food for Thought" and it was one of the most significant things that helped me transition.
