I'm going completely vegetarian for a week.. Though, I'm also trying not to eat too many pastas (people keep telling me pasta) and I know being a healthy vegetarian is alot more than that.<br><br>
Can anyone list a couple of foods and links to recipes that are delicious and different?<br><br>
I.E (I have a list of a lot of different salads) , but as far as entrees I'm coming up with nothing.<br><br>
I'm also looking for foods high in fiber & protein

Sometimes I like to cook, but I also like to keep things simple by concentrating on fruits, vegetables, whole grains, beans and nuts.

Just buy a bunch of fruit, vegetables, nuts, seeds, whole grains, beans...etc and try out different kinds and see what ya like <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

If you don't want to eat pasta and salad, you can make different kinds of nut roasts, vegetable stews (for example with chickpeas), bean stews, ratatouille, vegetable wok dishes, vegetable soups, dahl, chickpea "meat"balls, falafel... You can do a lot of stuff with mushrooms, too, for example this yummy <a href="http://smittenkitchen.com/2009/01/mushroom-bourguignon/" target="_blank">mushroom bourguignon</a>. And you can make a lot of food with tofu, as well.<br>
If you're stuck on breakfast or lunch options (I found it hard to find stuff to put on bread), you can get (or make) bean spreads or nut spreads, different kinds of cheese, peanutbutter... You can also eat cereal, yoghurt with muesli and nuts, porridge with fresh fruit...<br>

I've been vegetarian for about 3 years and still finding new ways to prepare foods! One week won't tell you enough about veg diets.<br>
Get all the recipe idea you can just by searching vegetarian recipes, vegetarian blogs,<br>
See what your library has. Don't fall into the easy trap of using eggs and cheese for meat. Vegetarian can mean lacto/ovo, and that is easy, but if you do choose that, try and keep it to a minimum, like for eating out.<br><br>
Good luck, and give it a least a month. You could be pleasantly surprised.<br><br>
What made you decide to do this?

Sauteed cabbage (or greens), white beans, kasha (or bulgar), canned stewed tomatoes, curry powder<br><br>
Bean burgers-2 cups beans, 1/4 cup wheat gluten, peppers, onion, garlic if you like, spice-whir in a food processor or just chop veggies and mash beans with gluten (you can use bread crumbs and/or grains or oatmeal instead). Shape into patties and lightly sautee.<br><br>
